Munchkin Meals for a 27 month old plus a healthy pudding recipe!

Good morning!

It’s the first Thursday of the month which  means it’s time for  Munchkin Meals!

I love Brittany’s link up as it gives me a chance to switch gears and focus on what The Love Nugget eats for a change.  I also enjoy getting to see what other kiddos are eating and learning new meal ideas.

The Love Nugget is now a very busy 27 month old.  By very busy I mean the kid is always on the go!  Well, unless he’s reading, he loves to sit in his chair and read.

He’s also pretty content to sit in his high chair and eat for hours on end.  Luckily he’s a pretty good eater but as I’ve mentioned before, he tends to be pickier with his vegetables.  Which means I have to get more creative!

Spinach Apple Pancakes were on the menu for breakfast yesterday.  We’ve been learning about Apples and the letter A this week so I’m doing lots of apple related foods, crafts, and activities.

He must be going through a growth spurt right now because not only did he sleep from 8:00 pm to 8:00 am, but he ate four pancakes with almond butter and a glass of milk!  Then before we left for the gym an hour later, he asked for a snack!  Little man was hungry!

As we ran out the door I gave him an Apple Cinnamon Oat Drop to eat in the car.

You’ll never guess what he asked for as soon as I picked him up from the gym daycare and hour later… a snack!

So while he colored his letter A page, I put together another apple snack for him to enjoy,

He was pretty exhausted after snack since it was past his nap time so he crashed right away.  At 27 months he still takes about a 2 hour nap everyday and goes to bed around 7:30-8:00 each night.  He likes his sleep but isn’t too much of a disaster if he misses a nap.  We definitely have one of those kids that as he gets more tired in the evenings, he get more and more wound up.  Goody for us right!?!  At least he’s not throwing tantrums when he’s over tired.  Yet…

When he woke up I had his lunch ready which was left overs from dinner the night before.

Pizza on a whole wheat flat bread from TJ’s, grapes, steamed broccoli and carrots with hummus.  The pizza had roasted chicken, asparagus, and organic cheddar cheese.  He ate most of it but didn’t finish his pizza which was surprising since he chowed down on it the night before.

We had some errands to run so I grabbed him something to munch on while out and about,

Plantain chips from TJ’s that we both enjoy snacking on :-)  These are a great alternative to regular banana chips since they are baked in sunflower oil and lightly salted.  They are more savory than sweet and contain much less sugar so I opt for these over the alternative.  If we do get sweet banana chips I buy the freeze dried ones as they are a slightly healthier option.

The Hubby had to work a little a later and we got home later than I’d planned so dinner was running behind.  The Love Nugget was hungry and was such a good little helper all afternoon so I made him another little snack to hold him over.

Blackberry Avocado Pudding

Blackberry Avocado Pudding

Ingredients

  • 1 Avocado
  • 1/3 cup fresh blackberries
  • 2 large pitted dates
  • 1/2 tsp. vanilla

Instructions

  1. Blend all ingredients in a food processor or blender until smooth. Stop to scrape down sides then chill and serve or serve immediately! Enjoy!

While he snacked, then played, I got dinner ready.

Tonight was Paleo Coconut Crusted Ling Cod with a Pineapple Avocado salsa, Coconut Cole Slaw and pineapple slices.

I thought it was delicious but The Love Nugget mainly wanted the pineapple.  Go figure!  He did manage to eat all the fish, avocado, pineapple and a few bites of Cole Slaw though.

After dinner is bedtime routine with The Hubby while I clean up.  They shower, brush teeth, go potty, get a drink of water then read a few stories before lights out and Good night :-)
